Revesby friend and chef Jose Souto approach has always been to show people the ease in which game can be part of their everyday diet.

As well as his lecturing job Jose travels around the country delivering game demonstrations at prestigious events such as the CLA , Holkham and Chatsworth Game fairs. He also delivers bespoke courses on game preparation and cookery at clients homes. Jose’s other love is the story of food, and he can be often heard telling his students:

“All food has a story to tell and we should know that story so that not only as chefs but as customers of supermarkets and shops, we can better understand our food, its providence and how truly special it is.”
